Even through the winter I still love no bake recipes. This healthy spin on Chocolate Macaroons is no exception.

This recipe can be ready in thirty minutes and these sweet treats disappear almost as quickly, as they are gobbled up by grateful friends and family.

CHOCOLATE MACAROONS

This recipe was adapted from my late mom’s cookbook. It was tucked away loosely on a separate piece of paper and was written by a woman named Margaret. She worked in our home, helping with things like cooking and cleaning when my Mom became too sick to take care of the massive operation that was our household of six.

My Mom really liked Margaret and so did I. She has spiky white-blond hair, chubby cheeks, and a big, fun personality. She liked to cook and I think my Mom absolutely loved having someone else cook for her for a change. Margaret’s dishes were all so different from my Mom’s usual rotation and she would always ask Margaret to write down the ones she especially liked.

This was one of them. It was called Chocolate Rocks. They are fudgy, laced with coconut, and full of the goodness of oats.

INGREDIENTS FOR CHOCOLATE MACAROONS

It’s a pretty short but sweet list of ingredients to make these lovely coconutty treats.

  • oats (use gluten free if needed)
  • cocoa or cacao powder
  • unsweetened shredded coconut
  • coconut oil
  • milk of choice
  • vanilla
  • coconut sugar

Margaret’s version wasn’t made with coconut sugar or coconut oil and it didn’t specify whether or not the oats were gluten free but the idea remains the same. Simple, easy, and really good. Really, really good. 🙂

When I say easy, I mean, can you stir? 😉

Melt together your coconut oil (non-vegans can use organic butter) with the coconut sugar and your milk of choice then stir in the cocoa and oats.

Boom.

Macaroons.

I’m willing to bet these ‘chocolate rocks’ will be a hit at your home during the holidays like they are at mine (we’ve made this twice in the last couple of weeks).

I’ve even been using my homemade hemp milk to make them! Try it out. SO easy and a great alternative to dairy.

FAQs

Can I freeze macaroon cookies? ›

Macarons are notoriously difficult to make, and so it really does pay to make them ahead of time and finish them off when needed. Freezing them is a great way of being prepared and it is so easy to do. After you have baked the shells, let them cool then wrap them and the baking sheet/tray in cling film and freeze.

What is the secret to good macarons? ›

The key to a good macaron is a good meringue, with smooth, shiny, stiff peaks. You can tell it's done when you can flip the bowl upside down and nothing comes out. The peak will be stiff yet still droop slightly. Start with aged or fresh egg whites and whip them on medium for a few minutes until bubbles form.

Do macaroons go bad? ›

Macarons last for 14 days at room temperature, 4 weeks when refrigerated, and up to 6 months when frozen. Remember, macarons are best at room temperature, to get the perfect texture. Too cold, they might be harder to bite in. You can bring them out whenever you need them.

Do bakeries freeze macarons? ›

The other way that macarons can be stored is by freezing them. However this should only really be done once they have been cooked and filled and are fresh out of the oven. Most macaroon shops/stores will store their freshly baked macarons in the freezer before they are sent out as orders.

How long do homemade macaroons last? ›

After baking the macarons, let them cool for about 30 minutes, fill them, and place them in an airtight container in the refrigerator for at least 24 hours to mature. After 24 hours, you can either leave them in the refrigerator for a week or place them in the freezer for 2-3 months.

Is macarons difficult to make? ›

Macarons are not complicated, but they are particular. There's a huge difference. All it really is is whipping up a meringue, folding in almond flour and powdered sugar, piping them, and baking them. It's not difficult or complicated per se, but there is a lot of nuance in each of those steps.

Are macarons the hardest thing to bake? ›

Macarons. Macarons are small, colorful, and delicate French pastries that are notoriously difficult to bake. They require a very precise technique and temperature control to achieve the perfect texture and shape. Even experienced bakers often struggle with macarons because they can easily crack, spread, or fail to rise ...

How do you soften hard macarons? ›

When you fill the macarons and place them in the fridge, the filling will begin to hydrate the shells, the shells will become softer, and the flavor will also develop. If you have over baked your macaron shells, or if they are hollow, maturing can take care of those issues in many cases.
